No you’re not imagining things, that is a picture of me drinking Baileys in July. “July?!” I hear you gasp. If you’re anything like me there are usually only two occasions that call for a Baileys: Christmas and a holiday abroad (those tiny bottles you get on aeroplanes are too cute to resist). So, how come I’m drinking Baileys in July you ask? Well, it turns out the original Irish cream makes a banging summer cocktail.
Not only are the liquor brand launching three new coffee cocktails, they’ve also partnered with Ashish – the British-Indian designer responsible for two of the iconic slogan tees Taylor Swift wears to perform “22” during her Eras tour – to release a limited edition slogan tee to match.
As an established iced coffee girlie, I legged it down to Shoreditch-born coffee brand Grind in Old Street to get a sneak peak at the new Baileys iced coffee cocktails on offer. Read on to see my official ranking plus recipes for how to make each one at home.
Baileys Cocktail #1: Irish Espresso Martini
An espresso martini and chocolate cream, need I say anymore? As someone who always opts for the most sickly-sounding Starbucks option like the Cloud Frappuccino, I thought this chocolatey martini was delicious. With drops of Tia Maria and Irish whiskey, it was definitely the strongest drink of the three, but that didn’t stop me from finishing every drop.
To make it at home you’ll first need an Irish mix which consists of Tia Maria, filter coffee, brown sugar and Irish whisky. Once shaken together and poured over ice, add a Baileys cream float on top by combining 50ml of cream and 25ml of Baileys.

Baileys Cocktail #2: Iced Baileys Dirty Chai
An iced dirty chai is my go-to coffee order and every sip I take reminds me of Christmas. The strong nutmeg, cinnamon and clove flavours have me longing for December all year round, so I can’t believe I’ve never thought of adding a splash of Baileys myself. Out of the three cocktails I tried, this one definitely had the strongest coffee flavour. If you’re someone who likes adding Baileys to their hot coffee at Christmas, I’d definitely recommend giving this a try in the warmer months.
To make it at home you’ll need 25ml chai syrup, 25ml Baileys, a splash of your chosen milk, a double espresso and 15ml brown sugar. Just mix all your ingredients together and pour over ice.

Baileys Cocktail #3: Iced Baileys Cream Float Cappuccino
The creamiest of the bunch, this take on a cappuccino was essentially a grown-up chocolate milkshake. I’ve never had an iced cappuccino before but I’ll definitely be asking for it from now on. The texture was creamy and smooth and the notes of chocolate from the Irish cream just added to the indulgent experience. I think I’m onto something here: put it in the freezer to make Baileys coffee ice cream.
To make this one at home you need some milk and a double shot of espresso. To create the creamy milk float, just combine 50ml cream, 30ml Baileys and 25ml milk. Pour both components over ice and top with chocolate sprinkles.
